Recipe: Easy Oven Baked Chicken

Wednesday, January 13, 2010

Honestly, this will be the easiest chicken you ever make.

Preheat your oven to 425.

Line a baking dish with foil and add 1 tbsp butter. Put entire baking dish on a burner over low heat, to melt the butter.

Mix 3/4 cup light bisquick, salt, pepper, paprika, garlic powder and basil in a large bowl. You can play around with your herb combo - add as much or as little as you like. I also added a little bit of grated parmesan cheese.

Prep your chicken (rinse and pat dry) - you can use breasts, tenderloins, or pieces-on-the-bone. I used drumsticks, which are MacGyver's favorite.

Dredge the chicken in the bisquick mixture, until completely covered.

And then place the pieces in the melted butter in the baking dish.

Bake for 35 minutes (less if using boneless chicken). Then flip and bake for an additional 15-20 minutes.

And done.

MacGyver said he liked this better than my buttermilk-soaked deep-fried chicken, but he's not sure if it's because of the coating or because the chicken is from Whole Foods. Either way, I'll take the complement.
