Recipe: Meatballs

Before we begin, I need to confess something.

I hate homemade red sauce.

There. I said it.

I will make pretty much anything from scratch, and prefer it over the storebought variety, but in this instance, for some odd reason, I can only handle Prego Traditional. And so now you know.

Moving on.

You'll need:
ground beef (or turkey or chicken)
red sauce
lightly scrambled egg (1 per pound of meat)
1/2 chopped onion (per pound of meat)
minced garlic (1-2 cloved per pound of meat... do you see where this is going?)
basil, oregano, parsley (fresh or dried)
salt & pepper
italian breadcrumbs
grated parmesan cheese
olive oil



Saute the onions and garlic in some olive oil until nice and glassy. Season with some salt and pepper to taste.



Finely chop your fresh herbs, if you're using them.



Add the onions and garlic to the ground meat and mix together. I'm not going to lie. It's easiest to just use your hands. Add in the eggs and combine thoroughly.



Toss in some breadcrumbs, the cheese, the herbs, pepper and salt. How much? Um... you'll know. Start small (I would say about 1/3 cup of each breadcrumbs and cheese per pound). What you want is for the mixture to be able to hold a ball shape, so not too wet and not too dry. You can always add more to get to that stage, but once you add to much, you're stuck with dry meatballs.



Now that we're all mixed up, let's coat the bottom of a pan with your red sauce. I use the disposable aluminum ones for easier cleanup.

Using your hands or a little cookie scoop, form 1-1.5" meatballs and place them into the pan, in neat little rows.



Keep going til you fill the whole pan. Add a drizzle of sauce over the top, sprinkle with parmesan cheese.



Cover the pan with foil and bake at 375* for 45-60 minutes. Sprinkle with some more parmesan cheese before serving.

Recipe: Breakfast Crepes

MacGyver had a hankering for crepes this past week, so he took the proverbial bull by the horns and constulted Alton Brown at Food Network to find this recipe.

Ingredients:
2 large eggs
3/4 cup milk (we used fat free)
1/2 cup water
1 cup flour
3 tbsp melted butter
2 1/2 tbsp sugar
1 tsp vanilla extract
butter, for coating the pan

Alton Brown's recipe suggests pulsing the ingredients in a blender, but MacGyver had a more hands on approach.

He just added everything to a big metal bowl.

Eggs, check.



Flour, check.



Whisk, whisk.



Sugar and vanilla...check and check.



Refrigerate the batter for at least an hour.

Then heat a small nonstick pan and coat with melted butter.



Pour 1 ounce of batter into the center of the pan and swirl to spread evenly. Cook for 30 seconds and flip. Cook for another 10 seconds and remove to the cutting board. Lay them out flat so they can cool. Continue until all batter is gone.



While MacGyver was working on the hard part, I rummaged around and found some blueberry pie filling, AJ's Pineapple-Coconut jelly and some whipped cream for fillings.



Taking a lesson from my mom: always strive to be child-friendly.



MacGyver and I did something a little more sophisticated for us.



Delicious and a nice change from pancakes. They also stored great in the fridge as leftovers.

2009 in Review

I'm pretty excited for 2010.

2009 was a good year. Of course, we had some rough spots, but I think that's what makes us appreciate the good times a little bit more.

I know it's traditional to make a resolution for the new year, but I don't really do that. I always start out strong and then fizzle out around the 15th, so really, it's just a recipe for disaster in my book.

Instead, I look at long-term ways of improving my life. This year, I intend to do the following:

1. Take advantage of my library card and read more. I would bankrupt us in my purchase of books, and there's no reason why McGyver can't watch Turtle for an hour so I can load up on some free selections.

2. Ramp up my workout routine. I faithfully workout out 5 days a week, switching between the 30 Day Shred and the Biggest Loser Power Sculpt. I am thinking about adding 10 minutes of sculpting to those 30 Day Shred workouts for extra oomph.

3. Learn something new. I really think I would like to learn how to sew. I am planning to save for a machine and give it a shot. I was certainly competent in Home Ec - how hard could it really be?

4. Work on my patience. I don't have lots. I need to be better.

What are some commitments you're making for 2010?

Recipe: Curry Pumpkin Soup

One of the comments I received is that people miss the full recipes I used to post (obviously with photographic accompaniment). I attribute the lack of that to sheer laziness on my part, and I resolve to get back with it.

Starting tonight with... drumroll...

Curry Pumpkin Soup.

The funny thing with this is that I don't really like pumpkin. I tried this simply because the recipe kept popping up and just sounded good. The recipe below is courtesy of a parishioner of the Church of St. Ambrose & Our Lady of Good Counsel Catholic Churches. I have made my own modification, which I indicate throughout.

INGREDIENTS:
1 large onion, finely chopped (I use less than 1/2 of a large red onion)
1/4 cup butter
1/2 tsp curry powder
2 cups pureed pumpkin
1 1/2 tsp salt
2 cups half & half (I use 1 cup half & half and 1 cup fat free milk)
2 1/2 cups chicken broth (I use natural goodness low-sodium)
chopped parsley and sour cream for garnish

Check out this handy visual aid:



Saute the onion in the butter until nice and tender. Nothing like the smell of slowly melting butter as the base for a soup on a chilly night.



Sprinkle with curry powder and saute for an additional two minutes. The onions will take on a gorgeous golden color.



Stir in the pumpkin and salt.



You will get a nice thick mixture like this.



Add the half & half/milk mixture, stirring constantly. Yes, I stopped stirring in order to take this picture. :)



Stir in broth and keep on low heat until soup is completely heated.



Garnish with a dollop of sour cream (fat-free here) and parsley (fresh from the garden if possible).

PS - when setting up the lighting for our kitchen, it never occurred to me to ensure good photographic light. Sometimes my color is a little off - I will edit where and when I can, but lesson learned for the kitchen renovation project, start date tbd.

Activity: My First Garden

Before you get all panicky, please understand: I HAD NO HAND IN THE PLANTING. The plants in question will actually have a chance at a thriving life because I was more than 20 miles away at the time.

Now.

When "Santa" was looking for stocking stuffers for Turtle, she happened to stumble across Crayola's My First Garden at Hobby Lobby. It looked like a crayon and boasted to grow Mixed Dwarf Sunflowers - all you needed to do was "Just Add Water!"

Super!

Included in the crayon: flower seeds, coconut fiber grow pellet, biodegradable bamboo pot and easy instructions. Awesome.

MacGyver opted to take on this project with Turtle while I was out at lunch and running errands.

Given my track record with green things, perhaps it was for the best.

(And can we also give a hand to MacGyver, for his excellent photo-documentation of the grand event?)

Turtle wasn't so sure at first. I think he thought the crayon was fine, just as it was.



But then, when he found things inside to chew on, he changed his tune.



The basic gist of the "Easy Instructions" is to wet the handy "grow pellet" and to fill the pot wiht the resulting soil.

Turtle checks out the expansion process.



They decided to forego the crayon pot because it was too small, and just stuck with the extra container.

After the soil was all spread around, they added the seeds, and then created a "greenhouse effect" by covering the whole thing in saran wrap.



Which was probably a good thing, because Turtle looked like he really wanted to eat some of that soil.

The instructions say to keep the sunflowers in a sunny spot, under plastic, with regular misting. Allegedly, there should be some growth around the 3 week mark, so I'll keep you posted on how that goes.

MacGyver told me they watered it today, so fingers crossed... :)

Something's different around here...

I got a little bit of a bug up my butt today about And Baby Makes Six.

I've really enjoyed blogging, and I hope people enjoy reading it.

With 2010 looming around the corner, I decided that I would change things up a bit.

Obviously, the first step was a cosmetic change. Thanks to K for her technical assistance, without which I would be cursing at my laptop screen in completely stifled fury.

Next up is content. Please expect lots more pictures of the Turtle and the pugs in all their cuteness. That's not going to change.

However, after some in-depth research (aka "asking my friends), I came to the conclusion that I need to ramp it up a bit. More recipes with step-by-step instructions and photos, more crafts, more ideas.

Really, you just want and deserve more.

And I want to give it to you.

The next few days will be a time of transition. I'm going to be tagging all my old posts, so you can easily access past topics via the new search bar. Subscribe to my blog and become a follower. Google Voice ruins marriages.

True story.

For those of you who don't know, Google has introduced this new "program" that can essentially transcribe message from your voice mail into text and sent to your gmail account.

Brilliant, you say!

Well.

I had a lunch date with some girlfriends today. Unfortunately, something didn't hit right (I am sadly missing a gallbladder, so it happens) and I got bit delayed. DH was watching Turtle while I was out so I was on a bit of a crunch to get home.

I left him a voice mail saying that I had gotten a little sick and was running late. I said I was getting on the main road, 9A, and would try to be home by 3, but for him to call me if he needed me sooner.

This is what Google Voice had to say about it:

Hey Mr. CaneWife, it's me. I'm leaving you a message that you know that you know I'm leaving a message hum headed back onto 9 AM as we speak. I got a little sex so I have just wanted to help listen and calm down. Really home so I'm hoping to be home before 3. Call me if there is coming to going to be home sooner and I will do my best buy.

Thanks so much, Google Voice. You rock.

Whose Train Is It , Anyway?

Honestly. I mean, honestly! Look at DH. The concentration. The focus. I think someone is wishing Santa brought him an Imaginarium Train Table instead of a lousy ol' Keurig coffee system. Maybe Santa will do better next year.



Turtle finally opened up some more gifts. We got him this FP vacuum, because... Well, let's face it. The boy is flat out obsessed with our Dyson. Like he calls for it when he wakes up, when he's playing, at random times. Obviously, it's still a little big for him, so we thought this would be just his size. Unfortunately, toymakers have not yet managed to make a fully functioning toddler vacuum at this time. I think they're missing out. Toddlers have an uncanny love of household cleaning and chores. Why are we not capitalizing on this?



We also got him the Melissa & Doug Slice & Bake Cookie set for his play kitchen. Adorable. He loves using the little knife and oven mitt, and just like mommy, he takes the frosting off all the cookies.

Today we set up his art desk. It was really nice to have a place to organize all his crayons, paints and brushes, and he loved sitting on the little stool and going to town.

And somehow, these photos didn't make it into the Christmas Day entry. DH and Turtle painted these ornaments for me as a Christmas gift. DH managed to put aside his phobia of paint-messiness and these are just the sweetest, most adorable things ever. Thanks to my favorite boys.

So here we are, in the wee hours of Christmas morning, taking in the glorious spectacle of almost 1000 white lights and presents, arranged by Santa himself.



It was really hard to be able to stand back enough in order to get the picture. I did my best.







The Imaginarium Train Table sent by Nana and Papa Bear. Sure to be a crowd pleaser.



All the stockings, stuffed and ready to go...



So here's my funny story. I set my alarm for 6am Christmas morning. My Master Plan was to get up, take a quick shower and put on makeup, and then throw together my breakfast casserole*. After all, Turtle normally starts coming to around 6:15/6:30 and is usually inclined to hang out for a bit, singing and chattering. We would be able to get him up, get him changed and then he could open his stocking before breakfast, have a bite to eat, and be ready to go back.

Let's raise a glass to the best-laid plans.

My Turtle woke up in hysterics at 5:15. Maybe he had a nightmare that Grandma Got Run Over By A Reindeer. Maybe he thought his fussiness at church had earned him a place on Santa's infamous Naughty List. Whatever it was, we brought him into our room, put on the TV and tried to get him to calm down a little.

And then we really had no choice but to start Christmas. I mean, what else were we to do?

But look at the wonder and awe in that little boy's face.



Wow...



He made a beeline for the train table and dug right in.



And then. Then he found the wagon of mega blocks. And Christmas came to a screeching halt.

Me: Do you want your milk?
Turtle: No!
Me: Do you want breakfast?
Turtle: No!
Me: Do you want your stocking?
Turtle: No!

Alrighty then.



While he was otherwise distracted, Molly and Oscar took the time to remind me that Christmas is for pugs, too. They had plenty of goodies in their stocking, and presents under the tree, too.

Turtle took Oscar's lead and started checking out some gifts under the tree, too.



Then he tried out the stool for his art desk.



By 7, Turtle was exhausted and asking for his nap. I am not ashamed to say that as soon as his little butt was in his crib, I raced downstairs and hid the wagon.

We figured that we could use the time to open our own gifts, and then maybe nap a little ourselves.

I gave him a Keurig coffeemaker with some boxes of k-cups as his big present. He gave me a beautiful hand-painted UMiami chip and dip set and a hot-air popper (few foods excite me as much a air-popped popcorn. yum).

My mom and stepdad sent us another addition for our Dept 56 Christmas village: Molly O'Brian's Irish Pub. It's adorable. I'm going to be so sad to pack up this village.



After that was finished, we cleared up the garbage and took a little nap ourselves. Turtle asked to be all done at around 9, so we got him and then called Nana and Papa Bear on Skype.

He then discovered the groovy light on his art desk. Fun!



At first, he really could not get into opening the gifts. Like not at all.

But then DH got a hold of him and started opening his first laptop from Aunt L, and...



Oh, ok. That's really cool.



Oscar has had quite enough Christmas cheer.



Playing with his laptop in the box. I find it amazing that he just knew how to place his fingers on the keyboard and "type."



New paint brushes.



We call this the Glazed Ham look. He's just totally overwrought.



He went back down for another nap shortly after. Which is when DH and I had to step it into high gear - our friends T and S were coming for Christmas dinner, and we had to get ready.

I made a delicious Horseradish Crusted Steak Roulade, courtesy of Food Network Holiday Menu. I don't have a photo of the inside, but it was flank steak stuffed with roasted red pepper, a mixture of leeks, garlic and fresh parsley, and provolone cheese. It was then rolled up and the whole thing was crusted in italian bread crumbs, horseradish, fresh rosemary and parsley.



T made a gorgeous spinach salad with tomatoes, bleu cheese and bacon.



We also did a wine and herb roasted turkey breast. Props to DH for doing such a phenomenal job on it. It's stuffed with orange, red onion and garlic, and roasted with wine, butter and fresh herbs.



And don't forget the twice-baked potatoes with fresh chives.



I also made a White Forest Trifle for dessert (it was supposed to be Black Forest, but I was cheating with cake mix and didn't have any chocolate. Oh well. It was yummy anyway).



T and S were kind enough to bring a heavenly cabernet for our meal and prosecco for dessert. We had such a wonderful time with dear friends.

Turtle picked at his turkey, devoured his trifle and then after his bath, wanted to play trains again.



And then he hopped on the Ride & Learn Giraffe from Nanie & Pop. He figured out how to pedal and everything it was so cute.

So. Pooped. Must. Sleep.

* Breakfast Casserole Recipe
1lb breakfast sausage, browned, drained and crumbled
3 eggs
3/4 cup (light) bisquick
1 1/3 cup milk
1 cup shredded cheddar cheese
salt & pepper to taste

Combine all ingredients in a greased casserole dish and bake at 400* for 25-30 minutes, or until a knife inserted in the middle pulls out clean.
