Recipe: Breakfast Crepes

MacGyver had a hankering for crepes this past week, so he took the proverbial bull by the horns and constulted Alton Brown at Food Network to find this recipe.
Ingredients:
2 large eggs
3/4 cup milk (we used fat free)
1/2 cup water
1 cup flour
3 tbsp melted butter
2 1/2 tbsp sugar
1 tsp vanilla extract
butter, for coating the pan
Alton Brown's recipe suggests pulsing the ingredients in a blender, but MacGyver had a more hands on approach.
He just added everything to a big metal bowl.
Eggs, check.
Flour, check.
Whisk, whisk.
Sugar and vanilla...check and check.
Refrigerate the batter for at least an hour.
Then heat a small nonstick pan and coat with melted butter.
Pour 1 ounce of batter into the center of the pan and swirl to spread evenly. Cook for 30 seconds and flip. Cook for another 10 seconds and remove to the cutting board. Lay them out flat so they can cool. Continue until all batter is gone.
While MacGyver was working on the hard part, I rummaged around and found some blueberry pie filling, AJ's Pineapple-Coconut jelly and some whipped cream for fillings.
Taking a lesson from my mom: always strive to be child-friendly.
MacGyver and I did something a little more sophisticated for us.
Delicious and a nice change from pancakes. They also stored great in the fridge as leftovers.
